Simon Liestøl Idsø
Nature enthusiast from a young age and never saying no to a trip no matter the weather. His grandmothers taught him Norwegian traditional home cooking that created the fundament for his career in Norway, Sweden, France and the US.
Simon was appointed to the position as Head Chef at Isfjord Radio Adventure Hotel at Kapp Linnè in July 2017. He came from the position as Head Chef at Huset in Longyearbyen, a position he took in January 2015. Simon grew up in Stavanger and has been a skilled chef since 2010.
Before moving to Svalbard, he was employed as Chef de Partie at Restaurant Ylajali in Oslo, where he was part of the team which recieved a star in prestigious Guide Michelin. Across the Atlantic Ocean, he has been employed as Executive Chef for The Royal Norwegian Embassy in Washington, D.C., where he was honored to promote Norwegian food culture to a number of eminent international guests.
Besides of cooking, his passions are hunting, trapping and fishing on Spitsbergen. He usually meets with a rifle over his back, in a tent on a remote mountain or experimenting new taste combinations in the arctic kitchen.
