Simon has been a nature enthusiast from a young age, never saying no to a trip no matter the weather. His grandmothers taught him Norwegian traditional home cooking that was the fundament for his cooking in Norway, Sweden, France and the United States.
Following various jobs at the Royal Court in Oslo and the Royal Norwegian Embassy in Washington, D.C., Simon came to Longyear City in 2015 the year after he participated in the process of achieving a star in prestigious Guide Michelin at Restaurant Ylajali in Oslo.
With over 7 years of experience as a skilled chef, he is now striving to emphasize and promote local produce at Spitsbergen. He usually meets with a rifle over his back, in a tent on a remote mountain or experimenting new taste combinations in the arctic kitchen.
