Meet our dedicated chef at Isfjord Radio Adventure Hotel! Rogier Jansen (29) was born and raised in flat Amsterdam, the Netherlands, but has fallen in love with Svalbard’s mighty mountains and nature. Among other things he takes the husky Jøkul out in search of Arctic ingredients that can be further processed into culinary delicacies.
– I am interested in the slow meals, where the food lays the foundation for good and close experiences. The combination of flavors and ingredients is often surprising, and it gives guests a more conscious relationship to what they eat, Rogier explains.
The chef has worked in Australia, New Zealand and Amsterdam, before guests at the restaurants Polfareren and Huset in Longyearbyen enjoyed his culinary skills. And now it’s Isfjord Radio’s kitchen that counts. Here Rogier conjures up local ingredients that end up as adventurous dishes in front of our guests.
It is harvested, smoked, pickled, fermented and dried – all with a dedicated passion and a great dash of innovation. Rogier’s food must be experienced – pure pleasure.
